There are Japanese patches for ghostscript.  
You can find packages ja-*ghostscript* under the packages directory.
I suppose they are capable of rasterizing Japanese postscript file.

I know little about Canna because I usually use wnn6.
But the minimal knowledge, I suppose, is toggle Japanese mode
by C-o. After entering the hiragana string, type space to convert
them to Kanji. Space is the most popular key to start conversion.
In some case C-w is used. For example, egg can start conversion with
either space or C-w.
If this does not work and you get some message in the mini-buffer,
be sure that the canna server is running.

As you can see, I'm not very familiar to both, so please
follow if something is wrong in this post Either in Japanese or English.
